Super Wallah Special (a quick curry)

Back when I was in my late teens I knew an Iranian man called Wallah and he wasn’t exactly short of confidence, He was known in my family as Super Wallah and he didn’t object to it!

He gave us this incredibly simple and delicious recipe that I’ve been cooking at least one a month for the past 40+ years.

If you have the money you can buy top end ingredients but equally it tastes just as good with mince.

Brown 500 grams of the meat of your choice with about an ounce of butter or the fat of your choice but NOT oil.

When the meat is brown thrown in some sliced leeks (two biggish ones) or an onion the size of your fist. Crush a clove of garlic with salt and throw that in too.

When the leek or onion is transparent the stir in 3 teaspoons of garam masala and 3 teaspoons of curry powder that you’ve mixed together. Use the strength of curry powder that you’re happy with.

Once that’s mixed in it will form a kind of paste like curry. You don’t need any thickener as the spices act as that. Throw in a tin of tomatoes, again according to what you can afford, and a third of the tin of water.

Cover and let it simmer for an hour stirring occasionally.

Serve it with what you will and there you have it – Super Wallah Special, the quickest, simplest and tastiest curry you will ever eat.
