Bagels

2 teaspoons easy bake yeast
1 1/2 tablespoons of sugar
300 millilitres warm water
500 grams strong white flour
1 1/2 teaspoons of salt

Stir the salt in the flour then stir in all the other dry ingredients. Make a well in the middle and add the warm water. Mix with a fork or dough hooks on a mixer. Knead for 10 minutes then prove in an oiled bowl for 1 hour.

Once proved knock back lightly then leave for 10 minutes.

Divide in to 8 to 10 pieces and shape into balls. The easiest way to do this is to roll lightly into a ball then move them with a circular motion on the board.

Press a floured finger into the centre of the ball and stretch to one third of the diameter.

Boils the bagels a few at a time flipping over after one minute then boiling for another minute.

Bake on an oiled tray for 20 minutes on 200C.
